泰式塔香鸡肉沙拉

Ingredients:
7 X$ a  _2 i7 o6 X! [1 F1/2 Chicken Breast Fillets,200g (1/2 边鸡胸肉) 8 q# \8 j0 r6 o4 A6 v) h
1 Teaspoon Light Soy Sauce (1 小匙酱油) 1 k! C" t( k; k" I/ o
1/2 Tablespoon Cooking Wine (1/2 汤匙花雕酒)
- [% ~" K8 w5 r/ y6 Z! U1 Teaspoon Cornstarch(1 小匙玉米粉) 1 t/ s0 L& n( Q1 h7 Y
Some Pepper(少许胡椒粉) 2 \3 n/ z( D1 t5 O+ D( @
2 Tablespoon Sweet Potato Flour (2 汤匙地瓜粉) + v" M* d( }* E" R
1 Tablespoon Cornstarch (1 汤匙玉米粉)

Methods: 4 D/ B( t, b5 K6 U9 B
Wash and cut chicken fillet into 2cm wide strips then marinate with Soy Sauce, Cooking Wine, Cornfstarch and Pepper for at least 30 minutes or more. - q; M$ G, ^+ k* i
将鸡胸肉洗净, 切2cm 宽条状, 然后加入酱油, 花雕酒, 玉米粉和胡椒粉调味至少30 分钟以上. ' f: q: v; C% G6 B) C" j
Coat the marinated chicken with the flour mixture(sweet potato flour + cornstarch) and set aside for 5 minutes before deep-frying.
( P+ n9 U5 O- x: R' V0 I/ O将腌好的鸡肉条沾混合好的地瓜粉和玉米粉, 然后放在一边等5分钟后才炸.( 这能防止粉从鸡肉上滑落)
/ J* r1 j1 F" {, W& HHeat up half pot of oil and deep-fry the chicken strips in two batches until golden brown, drain and set side.
' t' c% v+ J3 w  }热半锅油, 把鸡肉条分成俩次炸成金黄色后, 捞起放在吸油纸上吸干油分.

Chilli Sauce:
- I6 F0 y# J+ J- o2 Cloves Garlic, grated (2 颗蒜, 切末) 2 _$ ^" }6 M4 p; U0 m9 J) J9 s3 [( c
2 Small chilli, finely chopped (2 颗小辣椒, 切末) 5 z8 b/ I% p3 v7 q3 x8 Q
8 Thai Basil Leaves, finely chopped (8 叶九层塔, 切末) , B2 S) c2 K$ c3 M0 ]
1 Teaspoon Chopped Spring Onion(1 小匙葱花)
* W4 M. O; r" z% j2 Tablespoons Thai Sweet Chilli Sauce (2 汤匙泰式甜辣椒酱)
/ s+ v! j1 O3 Z8 G1 f/ G4 N; v1.5 Tablespoon Lemon Juice (1.5 汤匙柠檬汁) % ^  u, @/ A0 T( f6 \$ m" F3 a
1 Tablespoon Thai Fish Sauce (1 汤匙鱼露)
/ w# t1 {6 L% p- D' B  x1/2 Teaspoon Sugar (1 /2 小匙糖)
. L+ v5 e: V/ h9 P) b1 Tablespoon Drinking Water (1 汤匙食水) 0 I" {5 m! f  g" x- Y! v

Methods:
2 Y9 {( |# j8 u' ]  E8 U6 U, |Mix all the sauce ingredients together in a small bowl and set aside for later used. , P; W6 u" l' B5 X
把全部酱料的材料放在一个小碗里搅拌均匀, 待用.( 如果您不会吃太辣, 就不要放小辣椒或只放一颗)

1 Red Apple, shredded (1 个萍果, 切丝) 8 q5 U( ^; X8 u9 {# M
1 Japanese Cucumber, shredded (1 条日本小黄瓜, 切丝) / }- W2 M& p6 G( C; x3 I5 f& ~
1 Small Carrot, shredded (1条小胡萝卜, 切丝)
( I% X5 K1 V) {0 [3 [( D& u2 H6 Cherry Tomato, halves (6颗小番茄, 切半)
/ b- K5 w  Z1 K9 V. G) h) Z6 Lychee, remove seeds (6颗荔枝, 拨壳, 去种子) 7 p2 v4 O! e8 z6 X
) V) y/ @8 X3 [/ L
Methods:
2 G" F; h  ^8 |+ m  B5 KMix all the above ingredients in a mixing bowl then set aside in the fridge until serve.
$ l$ M5 W! u3 ^把全部的沙拉材料放在一个碗里搅拌均匀, 放进冰箱待用.
" G# B. C8 |+ IYou can used any other fruits or vegetables that you prefer or in season. - ]8 L# ]/ e) B& a  E
你也可以用其他的水果蔬菜来代替.

Assemble: 7 x- S9 M  @* p, V+ X% q; g
Place salad mixture on a serving plate, top with half of the fried chicken strips then drizzle some chilli sauce over the chicken and salad. 3 F$ E5 \! J% F
首先把拌均匀的冷沙拉扑在大盘上, 然后放一般的炸鸡肉条, 接着均匀的淋上些辣椒酱. " c7 @- s# \" g. |5 n
Continue topping the rest of the chicken and drizzle the rest of the sauce around it. 3 i& ]- |( Y+ O( n8 Z6 @
之后继续放上剩余的鸡肉条, 再淋上些辣椒酱. 9 f6 Q6 A  E; A$ V1 m2 a% Q. t  N

You might not need all the sauce, so add the amount that you prefer. Or you can serve it as dipping sauce for the chicken strips without the salad. ) W9 W1 y0 N4 O% R' d1 e

This sauce is enough for 1 chicken breast without the salad.
