直到现在,去新开的饭店尝鲜或是选旅游目的地,品美食一直是我们生活中非常重要的事情,于是关于谁更馋这件事儿,就一直无法达成共识。争论来争论去,其实也不过是五十步笑百步,所以十年前,这两个称呼就诞生了。
收拾行李准备去佛山前,五十步先生说:“如果不是时间不合适,真想跟你一起去佛山。”EXCUSE ME?去巴黎去美国去世界各地前从未见他想跟着,去个佛山倒是心动了?
想想也难怪,他最喜欢的就是粤菜各式点心,而同业的小伙伴常常周末自驾从广州、深圳专程去顺德找美食,干看吃不着对于吃货来说的确残忍,关键我还会第一时间PO图刺激他。写到这,为了维护夫妻间的感情,我决定之后必须安排一次和五十步先生的佛山美食之旅。

这里的“凤城”,指的就是顺德,是“烹饪之乡”和“粤菜之源”。2014年,顺德被联合国教科文组织授予“世界美食之都”称号,这是继成都之后我国第二个获得此殊荣的城市。顺德菜在粤菜中独树一帜,以“清、鲜、爽、嫩、滑、真”为特色,金牌菜、特色菜就有一百多道。

[size=14px]《舌尖上的中国》第五集“厨房的秘密”让均安蒸猪火了一把,而另一部《寻味顺德》中介绍了近40种顺德美食,让屏幕前的吃货们纷纷表示“舔屏舔到嘴抽筋”。
所以你要问顺德有什么美食攻略,不妨先在家预习一下这部纪录片,猪杂猪、无骨鱼、桑拿鸡、凉拌鱼皮、炒牛奶、菊花水蛇羹、毋米粥、陈村粉、烧鹅……而这些,也只是顺德美食的冰山一角。

“钻窿钻罅”搵美食
[size=14px]顺德酒肆遍地,说不准推荐去哪家比较好,但最好吃的酒家,大都隐藏在田野河边或民宅里的私房菜,如果你有顺德本地的朋友,那就真的有口福了!
情书上建议你吃上个十天八天,但我个人觉得一次三四天足矣,因为即使半个月你也只能尝个九牛一毛,一下胖好几斤心里也承受不起,倒不如满足地回味一阵,减好肥期待下次再来。毕竟除了寄情于美食,漫步岭南意蕴的水乡、到祖庙听故事、去膜拜武林高手……佛山总能有最好的安排,值得你一来再来。
要是在以前,我可以大胆的写一篇XX地美食攻略,而这回真的是尝到了皮毛,还好有当地朋友小霍带着,去的也都是旅游局推荐的餐厅,多少还是有些发言权的。

[size=14px]顺德是盛产鱼的地方,清蒸,煎焗,焖鱼,火锅……在火上折腾完了,开始尝试新的花样——吃鱼生,味蕾突然发现了新大陆,也就成了顺德人吃鱼的最高境界。制作的时候“即点、即杀、即切、即时”,追求的是一个鲜字。
而在鱼的运输、宰杀到放血、切片、摆盘、蘸料上,处处都有门道。比如说,给鱼放血很重要,放干净了鱼血,可以防范血中的寄生虫,切出来的鱼片才能显得晶莹剔透;鱼生切片要薄如蝉翼,才能把鱼刺剔除干净;厨师还要一边切一边吸干水分。鱼片上有水分,说明功夫还不到家。

[size=14px]顺德鱼生蘸料有十几种,蒜片、葱姜丝、花生油是杀菌的,花生碎、炸芋丝、芝麻是香口的,洋葱丝、酱泡指天椒是去腥的,当然还少不了盐和酱油。把各种佐料和鱼肉混合的过程叫“捞起”,在粤语里“捞”有收获、得到的意思,俗语说“一捞金、二捞银三捞死捞事事顺”。所以这道菜就有了好听又极富寓意的名字“风生水起”。

[size=14px]香云轩酒楼,就在清晖园北门对面的香云纱酒店里面,三层和四层都可以喝早茶。所以不论是住店的旅客还是来玩的游客都会到这里尝尝。此次原本没计划吃早茶,可大家总觉得不吃有些可惜,于是自然醒变成了早起,早上8点多四层大厅就坐满了。
虾饺、蒸排骨、凤爪、牛仔骨、萝卜糕、艇仔粥、烧麦都好吃,最爱流沙包和金钱肚,人家吃早茶看报聊八卦,我们一个个光顾着吃了,一个说话的都没有。

菜的色彩就是很不错,搭配得很好。不得不说,粤菜里顺德菜是不断演进发展出来的,充满了进化。更加有本地味道,更加精致。是中国味道的体现
